What if i told you coconut lovers out there, that you could make coconut ice cream with only four ingredients, and never touch a stove to do it? It’s not only possible, but also the easiest ice cream you’ll ever make. It’s rich and full of intense coconut flavor that any coconut lover will enjoy! All you need are four ingredients and an ice cream maker! This is one of those items that if you keep all of the ingredients on hand, you’ll never be without a dessert for last minute guests again!
1 C Milk
14 oz Cream of Coconut (Not coconut cream or coconut milk. Usually found with the mixers)
1 1/2 C Heavy Cream
1 1/2 C Toasted Coconut Flakes
A quick note on this recipe: This recipe could either be made up as ice cream or a gelato. If you exchange the heavy cream for whole milk (the entire recipe would use 2 1/2 cups of milk), you have gelato.
Take your toasted coconut and blitz it in a food processor to make it smaller. This allows it to be more evenly distributed.
Add the rest of the ingredients and process until blended.
Add your mixture to your ice cream maker and follow your specific maker’s instructions.
It really is that simple. Drizzle some rum caramel over it, eat it with pineapple or just on it’s own. It’s rich, luscious and easy as all hell to make!
