When you were a kid, there was always someone at lunch trading their chocolate pudding cups. It was THE treat to have in your lunch box. Dark Chocolate Pot De Creme is that chocolate pudding cup all grown up. Make these and pack them in your lunch for work and you’ll have people asking to trade their cars for a bite…or at least a day off…
110g Egg Yolk (About 7 Yolks)
550g Heavy Cream
175g Dark Chocolate
50g Cold Brew Coffee
Heat the heavy cream over medium heat to 160F
Remove from heat and add the chocolate. Blend until smooth.
Add everything except the yolks and blend until smooth.
Add the yolks and blend until smooth.
Strain into another container and allow to rest for 30 minutes to allow the bubbles to rise to the top. Skim off the bubbles.
Fill your jars leaving enough room for garnish. Tap the jars to remove any remaining bubbles.
Put the lids on fingertip tight so air can escape while cooking.
Cook at 158F for 50 minutes.
Remove the jars and allow them to rest on the counter for 15 minutes before transferring to the fridge to rest overnight.
