“Chipotle Apple Barbecue Sauce”

It’s week three of four of our Barbecue sauce Month. This edition will be a sauce that is the perfect pair for pulled pork. Apples and pork always go together, and this Chipotle Apple Barbecue Sauce is no different. It’s sweet, sour, acidic, and helps to cut the heavy fattiness of the pulled pork.

Chipotle Apple Barbecue Sauce - ingredients

Ingredients:

6 lb Apples (Peeled and Chopped)

2 C Red Onion (Sliced)

5.5 oz Tomato Paste

1 C Bourbon

1 C Brown Sugar

⅔ C Malt Vinegar

⅔ C Apple Cider Vinegar

2 T Worcestershire

2 t Horseradish

2 Dried Chipotle Peppers

1 C Water

Chipotle Apple Barbecue Sauce - Saute your onions until nicely caramelized. Add your tomato paste and allow to brown slightly with the onions. Deglaze with your bourbon and denature.

Chipotle Apple Barbecue Sauce - Add your apples, vinegars, worcestershire, horseradish, water, and the chipotles. Make sure your crumble the chipotles. Simmer until everything is nice and soft.

Chipotle Apple Barbecue Sauce - Once everything has simmered, take a stick blender and puree the mixture. As your blending add your brown sugar. This will help to thicken it.

Take the sauce and toss it in with your pulled pork. Let it soak in and really marry with it.
