“Blueberry Barbecue Sauce”

I’m calling June Barbecue Sauce Month! It’s almost summertime and we’re all thinking about the meats that are going to be gracing our grills. Some things inevitably are just better with a sauce! From ribs to pork tenderloin, sometimes a sauce just takes something to the next level.

This is Blueberry season, and this little gem lends it’s sweet and sour flavor to pork in this beautifully dark sauce.

Ingredients:

2 C Blueberries

½  C Balsamic Vinegar

½ C Bourbon

½ C Corn Syrup

½ t Kosher Salt

1t  Pepper

¼ C Red Onion

1 Jalapeno

¼ C Ketchup

2 Cloves Garlic

¼ C Worcestershire Sauce

1 t Sembal Chili Paste

Blueberry Barbecue Sauce - Slice your onion and garlic. Take the seeds from the jalapeno and slice it up as well. Saute on medium heat until onions and garlic have caramelized.

Add your bourbon and flame to denature the alcohol.

Blueberry Barbecue Sauce - add your remaining ingredients and simmer until large bubbles form

Add the remaining ingredients and simmer until large bubbles start to appear on the surface.

Blend with a stick blender until almost smooth. Leaving some chunks allows for texture.
