Everybody grows up. It sucks, but it’s true. Remember the days when you’d just hang out outside, or at the local mall, or go on trips to the local stores to get candy? What was that one candy that everybody remembers from their childhood? GUMMIES!!! Gummy worms, gummy bears and gummy sharks to name a few. What better way to help you forget all the pains of being an adult, while enjoying something very adult?

Adult gummies are everything you remember of your childhood, but with the flavor and booze of your adult life!

Ingredients:

100g Fortified Wine (I like Port)

29 g of 220 Bloom Gelatin (Knox works well)

130 g Fructose (Fructose is the sweetest commonly occurring natural sugar)

130 g Corn Syrup

 

The way we keep these gummies adult, is by not losing any of the alcohol by cooking sous vide.

Preheat your immersion circulator to 167F

Sprinkle your gelatin over your wine and mix quickly to make sure all of the gelatin is dissolved. Allow it to sit for a few minutes to make sure it's completely bloomed.

Place the jar carefully into the water, making sure the jar is completely covered.

Cook for one hour. It’s okay if you leave the jar in for a bit longer. It’s just candy!

Remove jar from the water and give the mixture a quick stir to make sure everything is fully combined. Then let the mixture rest at room temperature with the lid off for about 15 minutes.

Transfer the mixture to a squeeze bottle. It's an easy and mess-free way to fill what ever molds you plan on using. I'm using pig molds...because...why not?!

Fill your molds and either cover with plastic wrap or place in an air tight container and refrigerate over night.

After unmolding, let these alcoholic beauties come to room temperature and stretch them, bite their heads off, eat them like you're a kid again!
